Rosé de Saignée

Vineyard
AOC Chinon Rosé wine from vineyards on the sandy soil of Véron.
Terroir
Grape variety : 100% Cabernet Franc.
Soil : Sandy-gravelly alluvium.
Winemaking and aging
We "bleed" the wine, which means that between 12 and 24 hours after the harvest, we extract the jiuce from the tanks until is no lonnger red.
The alcoholic fermentation takes place at low tempratures (betwwen 14°c and 16°c, or 57°F and 61°F) for 2 to 3 weeks.
Then we rack it two or three times during three months preceding the filtration and bottling.

Cuvée les Galuches

Vineyard
A young vineyard (5 to 15 years) planted alongside the Loire.
Terroir
Grape variety : 100% Cabernet Franc.
Location : at the confluence of the Loire and the Vienne.
Soil : Sandy-gravelly alluvium.
Viticulture practices
We work the soil. In the most vigorous plots, we employ natural ground cover.
High trellising and leaf thinning
Winemaking and aging
Low-temperature fermentation for the first 5 days.
Maceration for 8 ot 12 days. Tank aged. Bottled in april

Cuvée Terroir

Vineyard
This 17-acres (7 ha) vineyard is located on the high plateaus of Beaumont-en-Véron.
Terroir
Grape variety : 100% Cabernet Franc.
Location : plateau of Beaumont-en-Véron.
Soil : clay-silex (flint).
Viticulture practices
Natural ground cover in employed. Leaf thinning is carried in july.
Winemaking and aging
Classical winemaking with 3 or 4 weeks of maceration. Extraction with pumping-over in temperature-controlled stainless steel tanks.
Aged in oak barrels for 12 months in our tufa caves.

Cuvée les Puys

Vineyard
This young vineyard covers 3 hectares (7,4 acres) on the hills of Chinon, facing due south. It benefits from plenty os sunshine, providing favorable ripening conditions for the grapes.

Grape variety : 100% Cabernet Franc.
Location : in the countryside near Chinon.
Soil : clay-silex (flint).
Viticulture practices
A natural ground cover is employed. We thin out the leaves of the grapevines to improve the sun exposure and aeration of the grape clusters.
Cluster thinning is carried ou if necessary.
Winemaking and aging
Classical winemaking with 2 to 3 weeks of maceration.
Aged in oak barrels for 12 months in our tufa caves.

Cuvée Vieilles vignes

Vineyard
Planted in the burgeoning month of april 1910 in a 3-acre (1,20 ha) plot on the banks of the Loire.
Terroir
Grape variety : 100% Cabernet Franc.
Soil : sandy-gravelly alluvium.
Location : the plains of Savigny-en-Véron.
Viticulture practices
We work and plow the soil.
High trllising and leaf thinning if necessary.
Winemaking and aging
Fermentation for 2 to 3 weeks at hight temperature.
Aged for 12 months in barrels that are 3 to 5 years old.

Le Clos de la Roche

Vineyard
This walled 2,5 acre (1 ha) vineyard was planted in 1950. It sits on a tufa hill with exposure due south. Vestiges still remain of the rubble walls that once surrounded Clos de la Roche.

Grape variety : 100% Cabernet Franc.
Location : the hills of Beaumont-en-Véron.
Soil : clay-limestone.
Sous-Soil : tufa.
Viticulture practices
We work the soil. Leaf thinning is done in july.
Cluster thinning takes place in august.

Winemaking and aging
Fermentation and maceration for 3 to 4 weeks with variation in temprature. We punch down the cap regulary to immerse the pomace.
Aged in puncheons for 12 months in our tufa caves
